Vegetarian Burger

Ingredients
- 12 small pita breads
- 4 shallots (finely chopped)
- 2 tbsp butter
- 6 tbsp oil
- 225 g winter wheat groats
- 750 ml vegetable broth
- 1 large carrot (coarsely grated)
- 1 bunch parsley
- 75 g shredded Gouda cheese
- 2 small eggs
- Salt
- Pepper (freshly ground)
- 3 tomatoes
- lettuce leaves
- cocktail sauce to taste
- parsley
Instructions

Sauté the shallots in 2 tbsp butter until translucent, add the winter wheat groats and carrot and cook briefly, deglaze with broth and let simmer for about 20 minutes over very low heat. Remove from heat and cool.

Stir in chopped parsley, cheese, and egg, then form 12 small patties from the mixture. If too soft, mix in some breadcrumbs. Fry in a pan with hot oil, 3-4 minutes per side until golden brown. Slice tomatoes.

Fill pita breads with tomato slices and patties. Serve on lettuce with cocktail sauce and parsley if desired.
