Zucchini Patties

Ingredients

  • 500 g zucchini
  • 750 g potatoes (cooked)
  • 3 eggs
  • 4 tbsp flour
  • Salt
  • pepper (ground)
  • nutmeg
  • 1 sprig mint
  • oil (for frying)

Instructions

    Wash and roughly grate the zucchini. Wash the mint, shake dry and finely chop it. Peel the potatoes, press them to remove excess moisture, then mix both with the eggs, mint and flour. Season with salt, pepper and nutmeg. Divide the dough into 16 portions and shape small patties with damp hands.

    Heat oil in a large pan and add about four patties at a time, cooking each side for 3-5 minutes over medium heat until golden yellow. Enjoy the patties cold or keep them warm in an oven at 100°C until serving.
