Tofu Vegetable Patties

Ingredients

  • 1 Carrot
  • 300 g Tofu
  • 2 Spring Onions
  • 1 Garlic clove
  • 4 tbsp plant oil
  • 0.5 handful fresh herbs (e.g., parsley and coriander)
  • 2 Eggs
  • 3 tbsp breadcrumbs
  • 1 tbsp ground almonds
  • 1 pinch ground cumin
  • 0.5 tsp Curry Powder
  • Salt
  • black pepper (freshly ground)
  • 400 g Strawberries
  • 1 handful basil

Instructions

    Peel the carrot and grate finely. Crumble the tofu with a fork. Wash, trim, and slice the spring onions into thin rings. Peel and finely chop the garlic. Sauté both in 1 tbsp oil for 1-2 minutes until colorless. Wash the herbs, shake dry, pluck the leaves, and finely chop.

    Combine the tofu with garlic, spring onions, herbs, and carrot shreds in a bowl. Stir in eggs, breadcrumbs, almonds, cumin, and curry; season with salt and pepper. If the mixture is too soft, add more breadcrumbs. Shape into 8 patties and fry in a hot pan with remaining oil, about 4 minutes per side until golden brown. Drain on kitchen paper.

    Wash, trim, and quarter the strawberries. Plate with the patties, sprinkle basil, grind fresh pepper over, and serve with a yogurt dip if desired.
