Ingredients
- 4 eggs
- 500 g carrots
- Salt
- 4 tbsp olive oil
- 2 tbsp white wine vinegar
- black pepper (freshly ground)
- parsley (for garnish)

Boil the eggs in water for about 10 minutes. Drain, cool, peel and chop.

Peel the carrots; cook one large carrot in salted boiling water until tender, then cool, pat dry, slice into 0.6 cm thick rounds and cut flower shapes with a cookie cutter. Grate the remaining carrots and mix with the eggs.
