Bean Salad with Cucumbers, Cheese and Walnuts

Ingredients

  • 400 g string beans
  • Salt
  • 1 cucumber
  • 125 g blue cheese
  • 40 g walnut kernels
  • 2 tbsp Apple cider vinegar
  • 2 tbsp lemon juice
  • sugar
  • Pepper
  • 3 tbsp olive oil

Instructions

    Trim, wash the beans and blanch them in boiling salted water for about 8 minutes until firm. Drain, shock with cold water and let drain.

    Wash the cucumber, trim ends, halve it lengthwise and slice very thinly with a mandoline or vegetable peeler. Dice the cheese into small cubes and roughly chop the walnuts.

    Whisk together vinegar, lemon juice, sugar, salt, pepper and olive oil for the dressing. Toss the cucumbers and beans with the dressing, arrange on a plate and sprinkle with cheese and walnuts.
