Lentil Salad with Carrots

Ingredients

  • 800 g cooked lentils
  • 1 Carrot
  • 2 bunches basil
  • 0.5 lemon (juiced)
  • Salt
  • Pepper
  • 6 tbsp Olive oil
  • 6 tbsp vegetable broth
  • 100 g grated Parmesan

Instructions

    Peel and grate the carrot.

    Remove the leaves from the basil leaves.

    Warm the lentils with the broth, then mix in lemon juice, salt, pepper, and olive oil; let cool.

    Combine with grated carrot and basil, fill glasses, sprinkle Parmesan on top, and serve.
