Melon-Cucumber Salad with Feta

Ingredients
- 1 cucumber
- 1 cantaloupe melon
- 200 g sheep cheese
- 5 tbsp olive oil
- 1 Lime
- 0.5 tsp fresh oregano
- Salt
- white pepper
- mint (for garnish)

Peel the cucumber, cut it lengthwise into quarters and then into 1-2 cm pieces. Halve the melon, scoop out the seeds with a spoon, cut into wedges, remove the flesh from the rind and dice it to match the cucumber size.

Drain the feta well and cube it. Whisk together the olive oil, lime juice, and oregano, then season with salt and pepper. Toss the cucumber and melon cubes with the feta and vinaigrette, divide onto bowls, and serve garnished with mint leaves.
