Carrot Salad

Ingredients

  • 150 g yogurt
  • 3 tbsp shelled almonds
  • 1 tbsp Lemon Juice
  • 0.25 tsp salt (pepper)
  • 0.5 bunch Lemon balm
  • 400 g Carrots
  • 1 apple

Instructions

    Whisk yogurt, 2 tbsp almonds, lemon juice, salt and a pinch of pepper in a blender. Wash lemon balm, shake dry, finely chop the leaves and fold into the salad dressing.

    Peel carrots, grate coarsely and mix with the sauce. Wash the apple, remove core, grate roughly and add to the salad.

    Coarsely chop remaining almonds, toast them in a pan without oil, and sprinkle over the salad.
