Carrot Celery Salad

Fresh carrot celery salad with apple – crisp, healthy and full of flavor. Perfect as a light side dish or starter!
Ingredients
- 4 Carrots
- 1 knollensellerie (knobbed celery)
- 1 apple
- 2 tbsp Apple cider vinegar
- 2 tbsp lemon juice
- 1 tsp Honey
- 4 tbsp nut oil (40 ml each)
- Salt
- ground pepper
- 2 tbsp freshly chopped parsley
Instructions

Wash, dry and peel the carrots, celery, and apple. Quarter the apple, remove the core, then finely julienne all ingredients.

Whisk together vinegar, lemon juice, honey, and oil; season generously with salt and pepper. Toss the dressing with the vegetables and apple sticks, let rest for about 15 minutes. Taste the carrot celery salad and sprinkle with freshly chopped parsley before serving.
