Carrot Cake Porridge

The Carrot Cake Porridge from Spoonsparrow provides a great start to the day!

Ingredients

  • 1 pear
  • 1 tbsp Maple Syrup
  • a pinch of ground cloves
  • 50 ml Apple Juice
  • 1 carrot (120 g)
  • 2 tbsp dried cranberries (15 g)
  • 100 g rolled oats
  • 300 ml oat milk
  • 1 tsp cinnamon
  • a pinch of salt
  • 2 tbsp pecans (15 g)

Instructions

    Wash, peel and cut the pear into about 1 cm pieces. In a pan over medium heat simmer with maple syrup, ground cloves and apple juice for about 3 minutes. Set aside and let cool slightly.

    Peel and grate the carrot finely. Roughly chop the cranberries and combine with oats, oat milk, cinnamon, salt and grated carrot in a pot on medium heat. Reduce to low heat and simmer while stirring for about 5 minutes until the mixture thickens.

    Roughly chop the pecans. Divide the Carrot Cake Porridge into bowls, pour the spiced pear over it and top with the nuts.
