Spinach Smoothie

Ingredients

  • 2 tbsp sunflower seeds
  • 100 g young spinach leaves
  • Salt
  • 1 bunch parsley
  • 400 g yogurt (1.5% fat)
  • 200 ml milk
  • 200 ml mineral water
  • Salt
  • ground pepper
  • 1 tbsp Maple Syrup

Instructions

    Toast the sunflower seeds in a pan over medium heat without oil. Transfer to a plate and let cool.

    Wash and rinse the spinach, then blanch it for 15 seconds in boiling salted water. Drain on a sieve, shock with cold water, and let drain. Roughly chop the spinach. Rinse the parsley, shake dry, and pluck the leaves from the stems.

    Add yogurt, milk, mineral water, spinach, and parsley to a blender and puree until smooth. Season with salt, pepper, and maple syrup. Serve the spinach smoothie sprinkled with sunflower seeds.
