  • 1 bundle arugula
  • 600 g fresh, well chilled salmon fillet (skinless)
  • 1 untreated lemon
  • Salt
  • olive oil
  • 1 tsp mixed peppercorns

Instructions

    Wash the arugula thoroughly, remove tough stems, rinse and shake dry.

    Rinse the salmon, pat dry, slice into very thin pieces and arrange on a plate with arugula.

    Whisk juice of one lemon with olive oil and salt. Crush pepper in a mortar slightly. Combine all into a dressing and spread over the salmon immediately, then serve.
