Caprese Salad

Ingredients

  • 30 g pine nuts
  • 1 bunch Basil
  • Salt
  • freshly ground pepper
  • 60 ml extra virgin olive oil
  • 2 beef heart tomatoes
  • 2 balls buffalo mozzarella

Instructions

    Toast the pine nuts in a dry pan over medium heat until golden brown, stirring occasionally. Transfer to a plate and let cool.

    Wash and pat dry the basil leaves, pinch off the stems. Reserve some small leaves for garnish. In a tall mixing bowl, combine the remaining basil with a pinch of salt and olive oil, then blend with an immersion blender until smooth.

    Wash the tomatoes and slice them crosswise, removing the stem ends. Drain the mozzarella and slice it as well.

    Arrange tomato and mozzarella slices alternately on four plates in a fan shape, season with salt and pepper, drizzle with basil sauce, and sprinkle with pine nuts and basil leaves. This also makes a great starter, e.g., with penne al pomodoro.
