Ingredients

  • 1 handful basil
  • 1 kg small firm tomatoes
  • 1 l olive oil
  • 1 tsp salt
  • 1 tbsp peppercorns

Instructions

    Sterilize jars. Wash basil thoroughly and shake dry. Wash tomatoes, pat dry, and puncture skin multiple times with a wooden skewer. Layer tomatoes and basil (or other herbs of choice, e.g., bay leaves, rosemary, thyme) in the jars. Add salt and peppercorns and pour olive oil over them. Ensure tomatoes are fully covered. Seal jars tightly.
