Ingredients

  • 250 g horn-shaped whole wheat pasta
  • Salt
  • 100 g carrot and pea mix (frozen)
  • 1 heaping tbsp butter (20 g)
  • 1 tsp butter (for the pan)
  • 15 g wheat flour type 1050
  • 400 ml milk (3.5% fat)
  • Pepper
  • nutmeg
  • 100 g shredded cheddar cheese (50% fat in the tub)
  • 140 g canned corn (drained weight)
  • 2 Eggs
  • 3 tbsp whole wheat breadcrumbs (15 g)

Instructions

    Cook pasta in salted water according to package instructions for about 7 minutes until al dente, adding the carrot and pea mix after 2 minutes and cooking together. Then drain, rinse with cold water, and let it drip dry.

    Melt butter in a saucepan. Whisk in flour and sauté on medium heat for 3 minutes until lightly golden. Pour in milk, whisk well, bring to a boil, then simmer while stirring for 2 minutes. Season with salt, pepper, and a pinch of freshly grated nutmeg. Stir in about 80 g cheese and let it melt over low heat for 1 minute.

    Butter the muffin tin cavities. Mix corn with pasta and pour into the tins. Whisk eggs into the sauce, pour over the mixture, then sprinkle remaining cheese and breadcrumbs on top. Bake muffins in a preheated oven at 180 °C (160 °C fan; gas: level 2–3) for about 30 minutes. Cool for 10 minutes, release from the tin, and serve.
