Ingredients

  • 600 g mixed tomatoes (e.g., cherry tomatoes, black tomatoes, Roma tomatoes, eggplant tomatoes)
  • 250 g buffalo mozzarella (2 balls)
  • 10 g basil (0.5 bunch)
  • 3 spring onions
  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • Salt
  • Pepper
  • 30 g basil pesto (jar; 2 tbsp)

Instructions

    Wash and trim the tomatoes, then slice or quarter them according to size.

    Tear the mozzarella into pieces.

    Wash the basil, pat dry, and pluck the leaves.

  4. 4.

    Wash the spring onions, trim, and cut the white parts into thin rings.

    Whisk together olive oil and vinegar, seasoning with salt and pepper.

    Arrange tomatoes and mozzarella on a platter, drizzle with the olive oil mixture, then sprinkle with spring onions and basil and spread pesto over the top.
