Ingredients

  • 2 tbsp pine nuts
  • 2 mangoes
  • 2 balls buffalo mozzarella (≈125 g)
  • 1 red chili pepper
  • 1 untreated lime
  • 5 tbsp olive oil
  • Salt

Instructions

    Roast the pine nuts in a dry pan until fragrant, then remove and let cool.

    Peel the mangoes, cut the flesh on either side of the pit into slices. Drain the mozzarella and slice it as well.

    Wash the chili pepper, slit lengthwise, remove seeds and white membranes, and finely chop.

    Wipe the lime clean, pat dry, grate a little zest, then squeeze out the juice.

    Whisk together lime juice, zest, chopped chili, and olive oil; season with salt.

    Arrange alternating slices of mango and mozzarella on a plate. Sprinkle with pine nuts and drizzle the vinaigrette over the top.

    Serve with a light white wine and fresh white bread.
