Ingredients
- 1 mild red onion
- 1 handful mixed herbs (e.g., parsley, chives, basil)
- 480 g dried cannellini beans (canned)
- 280 g tuna in oil (canned)
- 100 g dried soft tomatoes (dried)
- 0.5 lemon (juice)
- 4 tbsp white balsamic vinegar
- Salt
- pepper (ground)

Peel and finely dice the onion. Rinse the herbs, shake dry, and finely chop the leaves. Drain the beans and tuna, reserving 3-4 tbsp of tuna oil. Slice the tomatoes into strips. Whisk lemon juice with balsamic vinegar, reserved tuna oil, salt, pepper, and sugar to make the dressing. Combine beans, roughly flaked tuna, onions, herbs, tomatoes, and dressing; season to taste. Let it rest for at least 30 minutes before serving or taking for lunch.
