California-Style Grapefruit and Spring Onion Salad

Ingredients
- 1 head of lettuce
- 0.5 bunch of spring onions
- 1 bunch of watercress
- 1 pink grapefruit
- 1 Avocado
- 100 g yogurt
- 2 tbsp lemon juice
- 0.5 tsp grated lemon zest
- 1 tbsp finely chopped parsley
- Salt
- Tabasco
Instructions

Separate the salad into leaves, wash, trim, dry and tear as needed. Trim and wash spring onions, slice into thin rings. Wash watercress, trim, shake dry and cut into small pieces, removing tough stems.

Peel the grapefruit with a sharp knife, remove the white pith. Separate the fruit segments from the membranes, catch the juice that drips out and squeeze the remaining grapefruit flesh by hand. Mix the juice with the segments.

For the dressing halve the avocado, remove the pit, loosen the flesh from the skin and mash finely with a fork.

Combine avocado puree, yogurt, lemon juice and zest, season with salt and a few drops of Tabasco, then fold in parsley.

Arrange salad ingredients on plates and pour the dressing over them.
