Ingredients
- 1 grapefruit
- 1 orange
- 1 pomelo
- 250 g mixed salad (e.g., iceberg lettuce, romaine, arugula)
- 500 g cooked beef roast
- 1 tsp liquid honey
- 4 tbsp olive oil
- 2 tbsp Lime juice
- Salt
- Pepper (freshly ground)
- 80 g peeled walnuts

Peel the citrus fruits, removing the white pith and separating the fruit segments from the membranes. Cut into small pieces if desired. Wash, dry, and tear the salad leaves. Slice the beef roast into thin strips and then into wider ribbons. For the vinaigrette whisk honey with olive oil and lime juice, seasoning with salt and pepper. Toast the walnuts in a hot pan without fat, remove, cool, and roughly chop.

Combine the salad, citrus segments, and beef on plates, sprinkle with walnuts, and drizzle with the vinaigrette before serving.
