Ingredients

  • 1 cucumber
  • 1 piece fresh ginger (ca. 2 cm)
  • 400 g jumbo shrimp (ready to cook)
  • 1 red chili pepper
  • 1 tbsp Sesame oil
  • 3 tbsp olive oil
  • 3 tbsp Lime juice
  • 1 pinch brown sugar
  • 1 tbsp light soy sauce
  • 1 medium papaya
  • 1 handful Thai basil
  • 1 handful Coriander

Instructions

    Peel the cucumber, cut it lengthwise in half and slice. Peel the ginger and finely chop.

    Rinse the shrimp and pat dry. Rinse the chili pepper, halve, deseed and finely chop. In a pan, fry the ginger, chili and shrimp in hot sesame oil for 1-2 minutes. Transfer to a bowl, add olive oil, lime juice, sugar, soy sauce, salt and pepper and mix well. Peel the papaya, halve, core and cut flesh into strips. Add to the shrimp mixture and let rest about 15 minutes.

    Wash the herbs, shake dry, pluck leaves and fold into the salad just before serving. Taste and serve on plates.
