California Rolls with Caviar

Ingredients

  • 4 surimi sticks
  • 1 piece cucumber (about 10 cm)
  • 0.25 ripe avocado
  • 1 tsp lemon juice
  • 200 g ready-made sushi rice
  • 1 tsp mayonnaise
  • 1 tsp wasabi paste
  • 2 toasted nori sheets
  • 4 tbsp trout caviar (or red caviar from lake sturgeon)

Instructions

    Halve the surimi sticks lengthwise. Halve the cucumber lengthwise, remove seeds and cut into ~0.5 cm thick sticks. Peel the avocado piece, slice it lengthwise into strips and immediately drizzle with lemon juice.

    Line a sushi rolling mat with plastic wrap and place a nori sheet smooth side down on top. Spread half of the sushi rice over it, press lightly, then carefully flip the nori so the rice lies on the plastic.

    Spread half of the mayonnaise and half of the wasabi paste on the lower third of the nori, lay half of the surimi sticks, cucumber sticks, and avocado strips on top, and roll using the mat. Form a second roll with the remaining ingredients.
