Calamari with Olive Salsa

- 2 Eggs
- 200 g Flour
- 0.25 l dry white wine
- 2 tbsp olive oil
- Salt
- 600 g squid rings
- 50 g chopped nuts (hazelnuts and walnuts)
- flour (for dusting)

Peel the lemons thoroughly with a sharp knife, remove the fillets and cut into pieces. Squeeze the juice from the remaining flesh and mix with honey and oil. Season with salt and pepper. Rinse the coriander leaves, shake dry and roughly chop. Peel and finely mince the garlic. Drain the olives well and coarsely chop. Combine the lemon pieces, coriander, and garlic with the dressing.

Separate the eggs for the batter. Mix flour with white wine, oil, a pinch of salt, and yolks. Let rest about 10 minutes.

Meanwhile wash and pat dry the squid rings. Whisk the egg whites until stiff and fold into the batter along with hazelnuts.

Dust the squid with a little flour, coat in the nut batter, drain, and fry in hot oil for 2-3 minutes per side until golden brown. Drain on paper towels and serve with the olive-lemon salad.
