Ceviche with Tilapia, Garlic, Onions and Bell Pepper

Ingredients
- 2 carrots
- Salt
- 7 untreated limes
- 1 Red Onion
- 1 head of fresh garlic
- 1 yellow bell pepper
- 500 g tilapia fillet
- 250 g cooked shrimp (headless and shell removed)
- 2 handfuls large roasted corn kernels (maiz frito)
- 2 tbsp chopped cilantro leaves

Peel the carrots and cut into sticks. Blanch in boiling salted water for about 4 minutes, then shock in ice water and drain. Wash the limes; slice 3 limes and juice the remaining ones.

Peel the red onion, halve it and slice thinly. Peel the garlic. Wash the bell pepper, halve it, deseed and slice into strips as well.

Wash the fish fillet, pat dry with paper towels and cut into bite-sized pieces. Mix fish, onions and garlic in a bowl with lime juice and refrigerate for about 30 minutes to marinate.

Layer lime slices, shrimp, carrots, fish pieces and onions in two mason jars and pour the remaining marinade from the bowl over them. Top with corn kernels, garlic and bell pepper strips and sprinkle with cilantro. Seal the jars and consume the contents on the same day, e.g., for a picnic.
