Chorizo Skillet with Scallops and Croutons

Ingredients
- 1 bundle parsley
- 300 g chorizo
- 2 Garlic cloves
- 6 slices white bread
- 20 scallops (prepped, cleaned)
- 2 tbsp olive oil
- 20 g butter
- pepper (ground)

Wash the parsley, shake dry and finely chop the leaves. Remove the skin from the chorizo and slice diagonally. Peel and crush the garlic. Cut the bread into small cubes. Pat the scallops dry with paper towels. In a hot pan with oil, brown the chorizo.

Add the scallops and garlic, cooking 1–2 minutes on each side. In another pan, melt butter and fry the bread cubes until golden brown. Add the parsley to the scallops, toss everything together, season with pepper, and serve in preheated plates.
