Cake with Cherry Meringue Cap

Ingredients
- 80 g Butter
- 70 g sugar
- orange aroma (a few drops)
- 1 pinch salt
- 2 Eggs
- 200 g Flour
- 1 heaping tsp baking powder
- 2 tbsp milk
- 750 g sour cherries
- 3 egg whites
- 60 g powdered sugar
- baking paper (for the pan)
Instructions

Beat butter, sugar, orange aroma and salt until fluffy. Add eggs one at a time. Mix flour and baking powder, fold into batter in two portions, adding enough milk to achieve a creamy consistency.

Line a springform pan with baking paper. Pour batter, smooth top, bake at 200 °C for about 35 minutes until light brown.

Wash cherries, drain and pit them. Whisk egg whites to half‑firm peaks. Gradually add powdered sugar, whisking until glossy meringue forms. Fold in cherries.

Remove cake from oven, spread cherry meringue mixture on top, then bake under high heat or grill until the meringue turns golden brown.
