Ingredients

  • 2 chicory
  • 1 Red Onion
  • 2 Tomatoes
  • 2 tbsp olive oil
  • 1 bunch freshly chopped parsley
  • 1 handful freshly chopped chervil
  • 1 minced garlic clove
  • 0.5 untreated lemon (juice and zest)
  • Salt
  • Pepper (freshly ground)

Instructions

    Wash the chicory, trim the tough core, and cut it crosswise into thin strips. Peel, halve, and slice the onion into strips.

    Halve the tomatoes, remove seeds, and dice the flesh.

    Sauté the chicory briefly in oil, add onions, and combine in a bowl. Mix in tomatoes, herbs, garlic, lemon juice and zest, then season with salt and pepper. Let rest for 10 minutes before serving.
