Ingredients
- 800 g white cabbage (1 small head)
- 1 onion
- 100 g turkey bacon
- 2 tsp caraway seeds
- 5 tbsp white wine vinegar
- 3 tbsp rapeseed oil (30 ml)
- 100 ml poultry stock
- Salt
- Pepper

Remove outer leaves from the cabbage. Wash, quarter, and cut out the core in a wedge shape. Slice finely with a vegetable peeler. Peel and finely chop the onion. Dice the bacon into small cubes.

Brown the bacon in a pan over medium heat for about 6 minutes until golden brown, then remove. Sauté the onions in the remaining fat. Add caraway seeds, vinegar, and poultry stock; bring to a quick boil. Pour the mixture over the cabbage, mix well, and let it infuse for 1 hour.

Stir in oil and bacon cubes. Spoon the cabbage salad into bowls and serve immediately.
