Apple Sauerkraut Salad

Ingredients

  • 500 g Sauerkraut
  • 1 Boskop apple
  • 4 tbsp Lemon juice
  • 1 red bell pepper
  • 3 spring onions
  • 3 Tbsp plant oil
  • 3 tbsp sunflower seeds
  • Salt
  • pepper (ground)

Instructions

    Peel the apple, quarter it, remove the core and cut into strips. Immediately drizzle with 2 tbsp lemon juice. In a bowl, separate the sauerkraut with two forks, mix in the apple strips. Halve the bell pepper, remove the core, discard all white membranes, wash and dice finely.

    Clean the spring onions, rinse and slice into thin rings. Add to the pepper cubes and combine with the cabbage. Whisk together remaining lemon juice, oil, salt, and pepper to make a dressing, toss the salad in it. Fry sunflower seeds in a non‑stick pan without oil until lightly browned, then sprinkle over the salad.
