Ingredients

  • 250 g lobster meat
  • 50 g pickled daikon radish
  • 1 pickled cucumber
  • 1 Spring onion
  • 100 g crème fraîche
  • Salt
  • Pepper (freshly ground)
  • 50 g freshly grated Parmesan

Instructions

    Preheat the oven to 200°C (400°F) with fan and top heat. Roll out wonton dough very thin on a lightly floured surface, cut circles, and press into the cavities of a greased mini muffin tin. Brush the dough tops with butter as well. Bake the croustades for about 8 minutes until golden brown. Let them cool slightly before carefully removing from the molds.

    Tear the lobster meat into small pieces. Dice the daikon radish and cucumber finely. Wash and trim the spring onion, removing the dark green parts; cut the remaining white part into thin ribbons. Mix all prepared filling ingredients with crème fraîche, season with salt and pepper, fill the croustades, and sprinkle with Parmesan.
