Cabbage Casserole

Prepare a cabbage casserole from Spoonsparrow.

Ingredients

  • 500 g medium-sized savoy cabbage (1 medium head)
  • Salt
  • 600 g Potatoes
  • 2 cloves garlic
  • 70 g onions (1 onion)
  • 2 tbsp olive oil
  • 100 g aged cheese (at least 45% fat)
  • 250 ml cooking cream
  • 100 ml milk (3.5% fat)
  • black pepper (ground)
  • Grated nutmeg

Instructions

    Clean the cabbage, remove outer leaves, quarter and cut into strips. Blanch strips in boiling salted water for about 8 minutes, drain and shock with cold water. Let them dry and set aside.

    Peel garlic cloves and onion, finely chop both. Sauté garlic and onion with 1 tbsp olive oil until translucent. Season with salt and pepper. Grease a baking dish with remaining oil. Mix cabbage with onions and garlic and place in the dish.

    Arrange potato slices in a brick-like pattern over the cabbage. Grate aged cheese finely. Whisk half of the cheese with cream, milk, salt, pepper, and nutmeg, then pour over the potatoes. Sprinkle remaining cheese on top. Bake casserole in preheated oven at 200°C (180°C fan; gas: level 3) for 30–35 minutes.
