Lentil Savoy Cabbage Soup

Ingredients

  • 200 g green lentils (or brown split peas)
  • 300 g Savoy Cabbage
  • 2 onions
  • 3 tbsp oil
  • 1 l vegetable broth (instant)
  • 1 Organic Lime
  • 1 small papaya
  • Salt
  • Pepper
  • chili powder

Instructions

    Cover lentils with water and cook for about 30-35 minutes.

    Clean, chop, and rinse the savoy cabbage. Peel and dice the onions. Heat 2 tbsp oil in a pot. Sauté onions until golden yellow. Add the cabbage and sauté briefly. Pour in broth, cover, and simmer for about 30 minutes.

    Grate lime zest and squeeze juice. Halve the papaya, scoop out seeds, peel, and cube it. Heat remaining oil in a non-stick pan. Briefly fry the papaya for 1-2 minutes, add lime zest, and drizzle with some lime juice. Season with salt, pepper, and chili powder.

    Drain lentils and add them with the papaya to the cabbage soup. Let everything simmer for another 2-3 minutes and adjust seasoning with salt, pepper, and lime juice.
