Buttermilk Flaxseed Pudding with Apple Cubes

This buttermilk and flaxseed pudding with apple cubes from Spoonsparrow is a great alternative to chia pudding.

Ingredients

  • 0.5 Vanilla bean
  • 400 ml Buttermilk
  • 75 g ground flaxseeds (6 tbsp)
  • 1 red apple
  • 1 tbsp Maple Syrup
  • 1 tbsp Lemon Juice
  • 1 pinch cinnamon
  • 30 g Pistachios (2 tbsp)
  • 2 tbsp rolled oats

Instructions

    Split the vanilla bean lengthwise and scrape out the seeds with a knife.

    Mix buttermilk, flaxseeds, and vanilla seeds together and let them swell for about 20 minutes.

    Distribute the flaxseed pudding into 4 glasses and refrigerate covered for 12 hours, preferably overnight.

    The next day, peel, wash, and dice the apple. Mix with maple syrup and lemon juice. Chop the pistachios. Add the apple cubes, pistachios, and oats to the buttermilk flaxseed pudding in the glasses.
