Chocolate Banana Crepe

- 125 g flour
- 50 g sugar
- 1 pinch salt
- 1 egg
- 300 ml milk
- fat (for pan)
- 2 ripe bananas
- 1 tbsp Lemon Juice
- 150 g dark chocolate couverture
- 50 ml whipping cream (at least 30% fat content)
- 4 tbsp stiff whipped cream
- 2 tbsp cocoa powder (for dusting)

Preheat the oven to 80°C with top and bottom heat. For the crepes, whisk flour, sugar, salt, egg, and milk into a smooth batter. Lightly oil a crepe pan and pour in 2-3 tbsp of batter. Tilt and swirl the pan to spread batter evenly; cook until both sides are golden yellow. Remove from pan and keep warm in the preheated oven. Repeat with remaining batter for three more crepes.

Peel the bananas, slice them diagonally, and toss with lemon juice.

Coarsely chop the chocolate and melt it with whipping cream in a saucepan. Arrange the crepes on plates, top half with banana slices, drizzle with chocolate sauce, and fold slightly. Serve topped with stiff whipped cream and dusted with cocoa powder.
