Burrata with nectarines from Spoonsparrow is the perfect recipe for grill lovers who want more than just meat on the grates.

Ingredients

  • 5 nectarines
  • 0.5 whole grain baguette
  • 1 red chili pepper
  • 5 tbsp Lemon juice
  • 4 tbsp olive oil (40 ml)
  • Sea salt
  • 1 tsp liquid honey
  • nutmeg
  • 0.5 bunch mint (10 g)
  • 400 g burrata (60% fat, Italian fresh cheese)

Instructions

  1. 1.

Wash the nectarines and cut them into quarters or sixths, removing the pits. Slice the bread into rounds.

  2. 2.

Halve the chili pepper lengthwise, deseed, wash, chop, and mix with lemon juice and 3 tbsp olive oil. Season with salt, honey, and freshly grated nutmeg. Wash the mint, pat dry, pluck the leaves, finely chop, and fold in.

  3. 3.

Brush the grill grates with remaining oil. Grill the nectarines and bread on the hot grill for 4–6 minutes to toast.

  4. 4.

Tear the bread into bite‑sized pieces and arrange them with the nectarines on a plate. Split the burrata into portions, place on top, and drizzle everything with the chili‑mint dressing.
