Fruitful Leafy Salad with Raspberry Dressing

Fragrant leafy salad with raspberry dressing from Spoonsparrow provides vitamins for a strong immune defense and elastic connective tissue!

Ingredients

  • 150 ml orange juice
  • 1 tbsp Dijon mustard
  • 2 tbsp balsamic vinegar
  • Salt
  • black pepper
  • 100 g raspberries
  • 4 tbsp cold-pressed rapeseed oil
  • 175 g small romaine lettuce (1 small head)
  • 150 g small radicchio (1 small head)

Instructions

    Pour the orange juice into a small pot and reduce over high heat to about one‑third of its volume.

    Whisk the reduced juice with mustard, vinegar, salt, and pepper until smooth. Separate the raspberries; set aside some for garnish, mash the rest into the sauce and stir in with a whisk before slowly adding the rapeseed oil.

    Wash and dry the romaine lettuce and radicchio, cut into bite‑sized pieces, toss with the dressing in a bowl, top with remaining raspberries, and serve the fruit‑laden leafy salad.
