Burger with Paprika and Cucumber Relish

Ingredients
- 4 lettuce leaves (e.g., iceberg)
- 1 tomato
- 4 ciabatta rolls
- 500 g ground beef
- Salt
- Pepper (freshly ground)
- a pinch cayenne pepper
- 3 tbsp Rapeseed oil
- 1 tsp brown mustard seeds
- 0.5 tsp turmeric

For the relish, peel and halve the cucumber lengthwise, remove the seeds, and dice finely. Wash, trim, and dice the bell pepper. Peel and dice the onion and garlic. Sauté both in hot oil until fragrant. Mix in the diced peppers and cucumber. Sprinkle with sugar, pour in vinegar, add salt, mustard seeds, and turmeric. Simmer on low heat for 10–15 minutes, then remove from heat and let cool; refrigerate overnight for best flavor.

Wash and dry the lettuce. Slice the tomato, removing the stem end. Halve the rolls. Season the ground beef with salt, pepper, and cayenne pepper, then form into four patties. Fry each patty in hot oil or a pan for 3–4 minutes per side until cooked through.

Assemble by placing the bottom bun on lettuce, tomato slices, and the patty. Add a spoonful of relish, then top with the upper bun.
