Steak with Pepper Sauce and Side Dish

Ingredients
- 800 g new potatoes
- 600 g green beans
- Salt
- 400 g spinach
- 1 Garlic clove
- 4 ribeye steaks (approx. 160 g each)
- 2 tbsp plant oil
- 1 Shallot
- 1 tbsp pickled green pepper
- 20 ml cognac
- 150 ml meat broth
- 100 ml whipping cream
- 2 tbsp butter
- nutmeg

Wash the potatoes and steam for about 30 minutes. Wash, trim, and blanch the beans in salted water for about 6 minutes. Shock and drain. Wash, trim, and briefly blanch the spinach. Shock and squeeze out excess moisture. Peel and finely chop the garlic.

Preheat the oven to 120°C fan. Sear the steaks on both sides in hot oil, season with salt and pepper, and bake on a rack (under a fat pan) for 5–12 minutes depending on preference. In the drippings, sauté the finely diced shallot and pepper. Deglaze with cognac and add broth. Simmer slightly and stir in cream. Season with salt.

Sauté the garlic in 1 tbsp hot butter. Fold in the spinach and season with salt and nutmeg. Toss the beans in the remaining hot butter, season, and plate with the spinach, potatoes, and steak. Drizzle a bit of sauce over each and serve.
