Ingredients

  • 2 handfuls arugula
  • 1 Red Onion
  • 100 ml plant oil
  • 8 oyster mushrooms
  • Salt
  • pepper (ground)
  • 3 tbsp Flour
  • 1 egg
  • 100 g breadcrumbs
  • 500 g ground beef
  • 4 buns (with poppy and sesame seeds)
  • 4 slices processed cheese
  • 4 Tbsp mayonnaise
  • 1 tbsp Lemon Juice
  • 1 tbsp whipping cream
  • Herb salt

Instructions

    Preheat the oven to 100°C fan.

    Wash the arugula, dry, rinse, and cut into small pieces. Peel the onion, slice into strips, and slowly sauté in 1-2 tbsp oil until soft. Clean the mushrooms and season with salt and pepper. Coat them in flour, then dip in beaten egg, and bread with breadcrumbs. Fry in another 2-3 tbsp hot oil for 2-3 minutes on each side and keep warm in the oven.

    In a bowl, knead the ground beef with salt and pepper and form four patties. Fry in another 2-3 tbsp oil around 6 minutes. Slice the buns in half and place one patty on each bottom half. Add one slice of cheese on top and put in the oven until the cheese melts slowly. Place the bun tops beside to toast slightly.

    Whisk mayonnaise with lemon juice and cream, season with herb salt.

    Remove the baked burgers from the oven and distribute arugula over them. Top with onions and breaded mushrooms. Drizzle the mayo mixture over and serve topped with the bun top.

    Serve with fries and pickles as an accompaniment.
