Lamb Burger with Ketchup

Ingredients

  • 3 cloves garlic
  • 500 g ground lamb
  • 1 egg
  • 2 tbsp chopped coriander
  • 1 tsp curry powder
  • 1 pinch hot paprika powder
  • 2 pinches coriander powder
  • 0.5 tsp fenugreek seed powder
  • 3 tbsp breadcrumbs
  • Salt
  • 4 lettuce leaves (e.g., iceberg)
  • 2 Tomatoes
  • 1 Red Onion
  • 3 tbsp clarified butter
  • 4 sesame buns
  • 1 small bowl garden cress

Instructions

    For the ketchup, remove the green stem ends of the tomatoes and briefly blanch the fruit in boiling water for about 1 minute, then rinse cold and drain before chopping into cubes. Peel and cube the onions, then combine with the tomatoes in a pot and bring to a boil. Add vinegar, sugar, and spices; simmer gently for about 20 minutes, then blend until smooth. Transfer to a screw-top jar and let cool.

    For the lamb burgers, peel and mince the garlic. Mix the ground lamb with the garlic, egg, spices, and breadcrumbs, seasoning with salt.

    Wash and dry the lettuce. Slice the tomatoes into rounds and cut the onions into rings. Heat the clarified butter in a pan. Shape 4 flat patties from the meat mixture and fry each side for 4–5 minutes in the hot butter. Halve the sesame buns horizontally, assemble burgers with lettuce, tomato, onion, patty, and garden cress, serve with some ketchup and use the rest elsewhere.
