Ingredients

  • 450 g shrimp (ready to cook, peeled and deveined)
  • 150 g chicken breast fillet
  • 1 red chili pepper
  • 0.5 tsp cumin
  • Salt
  • pepper (ground)
  • a handful of red Swiss chard leaves
  • 3 sprigs Mint
  • 0.5 cucumber
  • 1 vegetable onion
  • 20 g butter
  • 4 ciabatta rolls
  • 250 g plain yogurt
  • 1 tsp lemon juice

Instructions

    Preheat the oven to 220°C with upper and lower heat. Wash, dry, and finely dice the shrimp and chicken breast fillet into very small cubes. Use a sharp knife to cut through until a moldable mass forms. Wash the chili pepper, halve it lengthwise, deseed, and finely chop it as well. Mix together with the remaining spices and form 4 equal-sized patties. Place them in a bamboo steamer basket and steam for 8 minutes.

    Meanwhile, rinse the Swiss chard leaves, wash, trim, and dry them. Wash the mint, shake off excess water, and pluck the leaves from the stems. Slice the cucumber into very thin, long slices with a mandoline. Peel the onion, cut it into rings, and sauté in a hot pan with melted butter until golden yellow. Remove and drain on kitchen paper.

    Cut each ciabatta roll horizontally and toast in the preheated oven for 5 minutes. Season the yogurt with pepper, salt, and lemon juice and spread it on the bottom half of the roll. Top with cucumber slices and Swiss chard leaves, then place one shrimp‑chicken patty on each. Garnish with a few mint leaves, close with the top half of the roll, and serve plated.
