Ingredients

  • 150 g celery root
  • Salt
  • 1 small firm mango
  • a handful of soy sprouts
  • a handful of leaf lettuce (e.g., mizuna)
  • 1 red chili pepper
  • 50 g sour cream
  • 2 tbsp mayonnaise
  • Lemon juice
  • 4 sesame burger buns
  • 8 portobello gourmet mushrooms
  • 2 tbsp sesame oil
  • black pepper (freshly ground)

Instructions

    Peel the celery root and cut into thin strips. Salt and let stand for about 10 minutes, then pat dry. Peel the mango, remove the flesh from the pit, and slice into thin strips. Rinse the sprouts and drain well. Set aside a few of each for garnish. Wash and trim the lettuce; set aside some leaves for topping and roughly chop the rest. Wash and trim the chili pepper, then cut diagonally into rings.

    Whisk the sour cream with mayonnaise until smooth, seasoning with salt and lemon juice. Fold in the prepared mango, sprouts, celery, and lettuce.

    Halve the buns horizontally. Clean the mushrooms, remove stems, and grill the caps along with the buns in a hot skillet using sesame oil. Flip the mushrooms once and cook for 4-5 minutes, seasoning with salt and pepper.

    Place lettuce leaves on the bottom bun halves. Arrange two portobellos per half topped with mango salsa, garnishing with remaining mango strips, sprouts, and chili rings.
