Ingredients

  • 75 g instant bulgur
  • Salt
  • black pepper (freshly ground)
  • 2 lemons (juice)
  • 75 ml olive oil
  • 100 g chopped parsley
  • 25 g chopped mint
  • 1 bunch spring onions
  • 3 tomatoes
  • mint for garnish

Instructions

    Pour boiling water over the bulgur according to package instructions and let it soak briefly. Season with salt and pepper, then stir in olive oil and lemon juice; let rest for 15 minutes.

    Meanwhile wash, trim, and finely chop the spring onions. Briefly blanch the tomatoes, shock them, peel, quarter, seed, and finely chop as well.

    Stir the parsley, chopped mint, and spring onions into the bulgur, taste, arrange in bowls, and serve garnished with tomatoes and mint.
