Bulgur Salad with Tomatoes and Cucumber
The bulgur salad with tomatoes and cucumber from Spoonsparrow is quick to make and a great idea for lunch.
Ingredients
- 250 g bulgur
- Salt
- 300 g cocktail tomatoes
- 3 spring onions
- 1 salad cucumber
- 1 handful parsley
- 1 handful mint
- 1 lemon (juice)
- 6 tbsp Olive oil
- Pepper
- a pinch ground cumin
Instructions

Cook bulgur in boiling salted water according to package instructions. Drain if necessary, let it cool.

Meanwhile wash and halve the tomatoes. Trim, rinse and slice spring onions into thin rings. Peel, rinse and dice the cucumber. Wash parsley and mint, shake dry and pluck leaves. Set aside a few mint leaves for garnish; finely chop the rest with parsley.

Combine tomatoes, cucumber cubes, spring onion rings and chopped herbs in a bowl. Squeeze lemon juice and mix with oil, salt, pepper and cumin. Add to the vegetable mixture, stir well and let sit about 20 minutes.

Gently fold the vegetable mixture into the bulgur and sprinkle remaining mint over the salad.
