Buckwheat Cookies

Ingredients

  • 300 g buckwheat flour
  • 80 g raw cane sugar
  • 0.5 Vanilla pod
  • 1 Organic Orange
  • 1 pinch salt
  • 1 egg
  • 200 g butter

Instructions

    Mix buckwheat flour with sugar. Split the vanilla pod lengthwise and scrape out the seeds. Rinse the orange in hot water, dry it, then grate its zest. Combine vanilla seeds, orange zest, and a pinch of salt. Cut butter into cubes and add to the mixture. Beat in the egg and knead by hand until smooth. Shape dough into a ball and cover for 30 minutes in the refrigerator.

    Roll out dough on a floured surface to 0.5 cm thickness and cut with a cookie cutter. Place on a baking sheet and bake in a preheated oven at 180 °C (fan 160 °C; gas: level 2–3) for about 10 minutes.

    Remove baked cookies from the oven and let them cool.
