Ingredients
- 300 g mainly waxy potatoes
- 200 g kale (without thick stems)
- 1 Spring onion
- Salt
- freshly ground pepper
- 1 egg
- 1 tbsp whipping cream
- 1 Tbsp clarified butter
Instructions

Cook the potatoes in plenty of salted water until tender, drain and let cool. Peel the potatoes and cut into small pieces.

Wash the kale, blanch it in salted water for 8-10 minutes, then shock in cold water and drain. Roughly chop the kale.

Wash and finely chop the spring onion. Sauté it in clarified butter, add the potatoes, crush about a third of them, then add the kale and brown everything together while turning occasionally.

Season with salt and pepper. Whisk the egg with the cream, pour over the vegetables and stir until thickened.
