- 800 g Brussels sprouts
- 100 g roasted pine nuts
- 500 g ripe tomatoes
- 2 Garlic cloves
- 1 slice white bread
- 1 tbsp grated Parmesan
- 4 tbsp olive oil
- Salt
- Pepper
- a pinch sugar

Wash, trim, halve the Brussels sprouts and cook in plenty of salted water for 15 minutes. Wash the tomatoes and add them to the Brussels sprouts for the last 2 minutes to blanch. Drain, let dry, then peel the tomatoes. Halve, core, and dice the tomatoes.

Drizzle the white bread with 1 tbsp oil and rub it with a halved garlic clove. Roast in an oven at 200°C for 2 minutes. Then crumble and mix with Parmesan.
