Ingredients

  • 600 g young fennel
  • 150 g radishes
  • 2 lemons
  • 2 tbsp maple syrup (30 g)
  • Salt
  • Pepper
  • 3 tbsp Olive oil (30 g)

Instructions

    Wash the fennel, halve it, trim off the tough core if necessary, and slice the green stalks into rings. Shave the fennel halves lengthwise into thin slices. Set aside the fennel greens for garnish. Wash the radishes, clean them, and shave them thinly as well.

    Peel the lemons thoroughly and cut out the fillets. Squeeze out the remaining flesh and mix the juice with 2 tbsp water, maple syrup, and olive oil. Season with salt and pepper, then combine the fennel, lemon fillets, and radishes with the dressing and let it rest for about 30 minutes.

    Taste the fennel salad again before serving and arrange on plates. Garnish with fennel greens and serve.
