- 8 slices Italian white bread (e.g., ciabatta)
- 6 egg tomatoes
- 2 shallots
- 2 Garlic cloves
- 1 bunch fresh arugula (washed and dried)
- Salt

Peel the onions and slice them into strips.

Wash and trim the arugula.

Wash the tomatoes, remove the stem ends, and slice them.

Heat 2 tbsp olive oil in a pan and brown the onions until golden. Add the tomatoes and cook briefly.

Slice the bread and toast under the oven grill or in a toaster. Peel and halve the garlic; rub the cut side on the toasted bread slices. Top with arugula, tomatoes, and onions. Drizzle each slice with olive oil, season with salt and pepper, and serve immediately.
