Bruschetta with Chestnut Mushrooms

Ingredients
- 12 slices of ciabatta (or baguette)
- 200 g silver onions
- 1 Garlic clove
- 350 g fresh chestnuts (brown caps)
- 4 tbsp olive oil
- Salt
- Pepper (freshly ground)
- 2 tbsp balsamic vinegar
- 2 tbsp freshly chopped parsley

Preheat the oven to 200°C (400°F) with both top and bottom heat.

Toast the bread slices on a rack in the oven for about 2 minutes until golden brown.

Remove the silver onions, split them in half, peel the garlic and finely chop it.

Clean, trim, and dice the chestnut mushrooms, then sauté them in hot olive oil until browned.

Add the onions and garlic to the pan, cook together, season with salt and pepper, stir in the balsamic vinegar, and let the liquid reduce slightly.

Fold in the parsley at the end.
